THE NIWAKI — Where Japanese Culinary Art Finds Its Monte-Carlo Address

Few cuisines possess the remarkable ability to communicate an entire philosophy through a single plate. Japanese gastronomy has never been defined by abundance, but by discipline, patience, and extraordinary respect for every ingredient placed before the guest. Every knife movement follows years of practice, every texture has a purpose, every colour contributes to the composition, while even empty space becomes part of the visual harmony.

Beyond the internationally celebrated sushi and ramen lies a fascinating culinary landscape where every prefecture proudly preserves its own recipes, seafood, vegetables, broths, fermentation methods, and centuries-old traditions. Travelling through Japan therefore becomes a succession of entirely different gastronomic experiences, each revealing another interpretation of Japanese identity. Perhaps this explains why Japanese cuisine continues to inspire even the most experienced travellers and chefs, proving that centuries of heritage continue to evolve without ever losing their authenticity.

THE NIWAKI — Where Japanese Culinary Art Finds Its Monte-Carlo Address

Within Monaco’s remarkable gastronomic scene, THE NIWAKI has established itself as an address where Japanese cuisine is interpreted with remarkable technical precision and profound respect for its origins. Every plate arriving from the kitchen reflects careful craftsmanship, allowing exceptional ingredients to remain the true protagonists while contemporary techniques introduce subtle new perspectives. Traditional recipes provide the foundation, yet every composition feels remarkably current, balancing flavour, texture, fragrance, colour, and presentation with extraordinary accuracy. Here, sophistication never relies on unnecessary complexity. Confidence is expressed through remarkable produce, disciplined execution, and a philosophy where every detail contributes to the experience.

The defining heart of THE NIWAKI continues to be its magnificent Sushi Counter. Seated directly before the sushi masters, guests witness an extraordinary level of craftsmanship unfolding naturally throughout the evening. Years of discipline reveal themselves through movements so controlled they appear almost instinctive. A knife glides effortlessly through the fish with extraordinary precision. Rice is shaped with movements perfected over decades. Every garnish, every brush of sauce, every carefully positioned element completes a composition where absolutely nothing appears accidental. Conversation between chef and guest develops naturally, transforming dinner into a deeply personal experience where culinary artistry becomes just as captivating as the dishes themselves. Few dining experiences create such a close connection between craftsmanship and hospitality.

Architecture continues the same philosophy. Spread across two beautifully designed levels welcoming approximately 140 guests, THE NIWAKI introduces interiors where Japanese restraint meets contemporary Monte-Carlo elegance. Warm natural tones, beautifully crafted timber, refined materials, softly illuminated spaces, and the remarkable shōji-inspired ceiling reflected endlessly through carefully positioned mirrors create extraordinary visual depth and an atmosphere of quiet sophistication. The elegant wooden Sushi Bar naturally becomes the centrepiece, while the beautifully designed Bar Lounge framed by floor-to-ceiling timber introduces another destination for cocktails and conversation. Outside, the spacious terrace overlooking the prestigious Avenue Princesse Grace offers one of the Principality’s most desirable settings, inviting guests to extend dinner beneath the Riviera sky long after sunset.

Executive Sushi Chef Wagner Spadacio — Excellence Shaped Across Continents

Behind the remarkable reputation of THE NIWAKI stands Executive Sushi Chef Wagner Spadacio, whose international career has established him among the leading figures of contemporary Japanese gastronomy. Born in Brazil, home to the world’s largest Japanese community outside Japan, his relationship with Japanese culture began remarkably early through his education at a Japanese school, where he experienced sushi for the very first time at the age of six. Fascination soon developed into vocation. His professional education continued in Paris, where he specialised in Japanese gastronomy before building an international career that would take him to London, Riyadh, Saint Barth, and Monaco.

Recognition naturally followed exceptional talent. In 2017 he earned the title of French Sushi Champion, followed one year later by the distinction of Vice World Champion of Sushi, confirming his place among the finest specialists in his field. Every destination throughout his career has contributed another layer of knowledge, refining both technical mastery and artistic expression. Today, each piece of sushi leaving his hands reflects remarkable discipline, extraordinary precision, and profound respect for centuries of Japanese culinary tradition, inviting guests to experience an authentic gastronomic journey to the Land of the Rising Sun.

Beyond the Dining Room

The philosophy of THE NIWAKI naturally extends beyond its restaurant walls. Bespoke private dining experiences provide an elegant setting for intimate celebrations, discreet business dinners, family occasions, and exclusive gatherings where every menu is individually conceived according to the wishes of each guest. The restaurant’s catering service brings the same remarkable attention to detail, refined presentation, and Japanese culinary artistry to prestigious events, private residences, luxury yachts, and carefully selected venues throughout Monaco. Wherever THE NIWAKI appears, its defining values remain unchanged: remarkable ingredients, technical excellence, thoughtful hospitality, and an experience remembered long after the final course has been served.
