Daniel Mild, head chef at the Hotel Goldener Hirsch as of January 2021, has always carried the love for his hometown of Salzburg in his heart, even while traveling abroad after finishing his apprenticeship. After stints on Queen Elizabeth 2 and the Bermuda Islands, his most recent position was as a private chef at the Castle Montfort in Salzburg. Mild’s variegated culinary arts are influenced not only by his extensive expertise but also by his many experiences from all around the world. His culinary philosophy is based on seasonal ingredients of the highest quality sourced from regional suppliers. He combines these ingredients with an unpretentious cosmopolitan touch to create an honest cuisine imbued with a deep respect for animals, nature, and the seasons.
Toque-awarded fine-dining Restaurant Goldener Hirsch or the popular “Herzl” with its rustic charm and traditional regional dishes. In both restaurants, painted hunting scenes adorn the heritage-protected walls to create an ambiance of modest elegance. The wine cellar is stocked with a premium selection of wines to round out the culinary experience with perfect pairings for every dish. Attesting to the immense popularity of the place, many celebrity photos grace the walls: Leonard Bernstein, Herbert von Karajan, Helmut Lohner, Curd Jürgens, and other titans of the screen. Intimate atmosphere meets international flair at the Goldener Hirsch Bar
Thanks to the Countess von Walderdorff’s boundless hospitality, the Hotel Goldener Hirsch and its bar in the former courtyard became one of the most popular meeting places in Salzburg’s old town. To this day, guests appreciate the intimacy and family charm of this special location, which was remodeled with a glass roof, flooding the space with natural light. Each year during the Salzburg Festival, the Goldener Hirsch Bar transforms into a hotspot for culture vultures and international celebrities. The likes of Liz Taylor, Herbert von Karajan, Luciano Pavarotti, the Rothschilds, the Gettys, and the Prince of Wales have enjoyed a drink here. A favorite among the long list of wines, cocktails, and other drinks is the house cocktail “Susanne”, created more than 30 years ago for a patron’s daughter, who has never ceased to frequent the bar since that time.
