These include chocolate from Original Beans, a producer working with rare cacao varieties while supporting social and environmental projects in cacao-growing regions.

A completely different direction follows with the Crudo Pacífico: raw tuna accompanied by Amarillo-Ponzu dressing, golden kiwi and seaweed, creating a lively combination of citrus, sweetness and gentle spice.

Among all the dishes, however, one deserves special attention. The GRETA OTO Ceviche has become a signature for good reason. Widely recognised as Peru’s national dish, ceviche is prepared with fresh seafood cured in the celebrated leche de tigre—a citrus marinade enriched with chilli, coriander, onions and roasted sweet corn that is so popular it is often enjoyed on its own. Guests may choose between the classic or exotic version before selecting organic salmon, mahi-mahi, Imperial King prawns or grilled watermelon, each bringing a completely different character to the plate.

The main courses continue the journey from land to sea. The beef fillet, served with fermented Kampot pepper and GRETA OTO Béarnaise, offers remarkable depth of flavour, while whole grilled octopus, Imperial King prawns à la plancha, steamed salmon with pico de gallo, and the generous Arroz con Marisco showcase the strong connection between Latin American cuisine and the ocean.
