Gastronomic Excellence: the Rise of ROBUCHON in Monaco’s Food Scene

Dedicated to improving the local culinary scene, Manal Arman has partnered with Robuchon and opened three new restaurants in Monte Carlo, fusing the opulence already associated with Monaco with a more modern flair.

After relocating from London, Manal—an entrepreneur at heart with a keen sense of detail and an innate talent for creating opulent experiences—saw the need for the three projects and, with the help of famed interior designer Francis Sultana, set out to develop a fresh concept of elegant dining for the principality.
With the help of a group of bakers, sommeliers, and specialty chefs under the direction of Frédéric Garnier, each location produces culinary masterpieces by obtaining the best, in-season produce from leading vendors, attaining perfection in every way.

Chef Frederic Garnier and renowned interior designer Francis Sultana

Frédéric Garnier is in charge of the stoves at this authentic monument to Haute Cuisine.
After working for the Alain Ducasse company for a number of years, especially at Provence-based businesses, he naturally accepted the ROBUCHON MONACO adventure. His dishes, which celebrate abundant Mediterranean food, are a reflection of the chef’s skill and expertise, enhanced by a hint of enchantment.

One of the most well-known names in interior design today is Francis Sultana. He works on commercial, hotel, and residential projects all around the world. In 2009, he established his own studio in London. He is among the few British designers to be listed in the AD100 ranking published by Architectural Digest every year. He also appears in the top 100 lists of House & Garden, AD France, and AD Italy, and was voted one of Wallpaper’s top 20 interior designers.

Chef Izu, who is of Nigerian descent, has established himself on the Côte d’Azur. The culinary community remains captivated by his inventiveness. He spent several years working at the two-Michelin-starred Grasse region restaurant La Bastide Saint Antoine. He runs the Monegasque restaurant Gaïa and introduced La Petite Maison to Dubai. Chef Izu is brilliant, industrious, imaginative, and demanding; he never stops coming up with new ideas.

ROBUCHON MONACO

Albert II, prince of Monaco inaugurated ROBUCHON MONACO, an exclusive celebration, as a prelude to the soft opening of the establishment. Maîtres d’hôtel and waiters, chefs de cuisine and assistants, all display the ease of great establishments. The smile and agility of well-trained staff, who have been honing their skills for months, ensure that every guest feels like the most privileged guest of the most beautiful Palace in the Mediterranean.

Refinement reaches its peak in the setting envisioned by Francis Sultana. The tables on the landscaped terrace are made of glazed lava stone, adorned with a simple lettuce-green trellis that harmonizes with the sage-green woven Bonacina chairs and armchairs. Refinement in simplicity reveals the essence of flavors, unfolding in a bright and comfortable space where the quality of materials enhances the elegance of the furniture and decorative elements.

The menu at ROBUCHON MONACO reinvents the classics of French gastronomy with authentic indulgence and a fresh perspective, while celebrating the flavors and emblematic products of the Mediterranean terroir
