COYA Dubai was founded in 2014 and is located at the Four Seasons Resort, Jumeirah Beach. This versatile restaurant focuses on contemporary Peruvian cuisine and includes Spanish, Japanese and Chinese influences into its dishes. There are more than 189 seats and 40 seats in an enclosed veranda.
The menus change seasonally, but there will always be plates to share, ceviche, fish and meat cooked over the charcoal grill, and delicious cazuelas. There are also many vegetarian, vegan and gluten-free options if needed.
In addition to this, they also have an iconic bar, the Pisco Bar & Lounge. There you can find an extensive wine collection and the beautiful Members’ Club. Pisco is one of their signature drinks, a cousin of tequila. They infuse their own and use it in their cocktails or drink it straight.
Pisco is made from grapes, produced using copper pot stills. Peruvian pisco is never diluted, and it is conserved right after it is distilled. No additives are added, and there are four types of pisco: pure, aromatic, green must, and multi varietal. It takes 12 kilos of grapes to make one bottle of pisco!
They also have the world’s first Pisco Library with more than 15 different homemade Pisco infusions. The Pisco Sour has the perfect balance of liquor, citrus, bitters, and sweetness. They take it one step further by infusing their piscos by steeping fruits in the liquor for weeks. They have a range of flavours from blueberry and lavender, peach and apricot, strawberry and mint to raspberry, passion fruit, pineapple, lemongrass and cucumber. It is Dubai’s most visited destination to sample a Pisco Sour.
